Whole Milk Ricotta Cheese

Traditional ricotta is made by using the whey left over from making cheese, milk is added to the whey and the remaining curds heated then strained to make ricotta. Whole milk ricotta (i.e. this recipe) is made using nothing more than milk, cream, salt, citrus juice and a splash of apple cider vinegar. It is really that simple, you probably have all the ingredients at home already. The flavour of the citrus juice, such as lemon or lime, comes through in the final product and is totally delicious!
