Baked Ricotta Dip

This recipe started as a way to use up some ricotta I had left over from another recipe. Using ingredients I had on hand I simply mixed it all up, tasted it (there’s no ingredients that must be cooked before eating so a sneaky taste before it goes in the oven is fine) then popped it in the oven & let the magic happen.

After polishing off the first one I made it again and took it along with me to a BBQ, the host was more than happy to let me use her oven. The dip was a hit and disappeared in no time…I then had to make it again the next morning for brunch!

Instructions
  1. Pre-heat the oven to 200 degrees C
  2. Add all of the ingredients to a medium bowl and mix thoroughly
  3. Transfer the mix into a medium ramekin and bake for 20 minutes
  4. Serve with crusty bread
Recipe Notes

Use fresh ricotta purchased from a deli, not the type that comes in small tubs in the refrigerator section of the supermarket. The packaged stuff is too liquid for this recipe.

The dip puffs up a little like a souffle so serve it straight from the oven.

This is delicious with toasted sourdough bread, add a poached egg for a yummy brunch.
