Balsamic Chicken Tray Bake

If you’ve read my “about me” page you’ll know that I work for a big corporate in Melbourne. This means a daily commute on the train of about 40 minutes each way, nothing too difficult.

I’m usually out of the house by 7am and more often than not, home at about 7pm. Sometimes the last thing I feel like doing is cooking dinner.

Don’t get me wrong, I love cooking more than just about anything but sometimes I get in the door and simply can’t be bothered.

For days like that there’s nothing better than an all in one tray bake. Simple to prepare and minimal washing up. This recipe is also a winner for enabling me to have roast potatoes on a weeknight.

The tomatoes play an important role, they’re so juicy and delicious it means there’s no need to add additional sauce or relish…therefore saving on calories.

Coat the chicken & potatoes in the oil and balsamic vinegar

Balsamic Chicken Tray Bake
Tasty balsamic chicken with roasted potato, tomato and spinach....all in one tray.

Instructions
  1. Heat the oven to 220 degrees C
  2. Chop the potatoes (I don't bother peeling them) into 2cm cubes and place in a small oven proof dish or baking tray
  3. Add the chicken thighs then sprinkle over the thyme
  4. Drizzle over the vinegar and oil and toss everything to coat
  5. Sprinkle with salt & pepper
  6. Place the tray in the oven to bake
  7. After 25 mins, add the tomatoes to the tray
  8. After another 10 mins remove the tray from the oven
  9. Add the washed spinach to the tray and cover with foil. Allow to rest for 10 mins
  10. Serve
Recipe Notes

I use chicken with the bone in and skin on. You can of course use skinless and boneless chicken if you wish, boneless thighs will hold up to this same cooking time.
