Refined Sugar Free Carrot & Walnut Muffins

Who doesn’t love a super tasty snack? These muffins are the perfect way to kill the craving for cake knowing that you’re only eating the good stuff.

I love these muffins because as well as loving cake, I love to bake. It just isn’t something I get to do that often. These freeze really well, so cooking up a batch on the weekend and freezing individually means you can grab one on the way out the door to have an awesome snack ready for later in the day.

Perfect as a mid afternoon snack these spicy carrot & walnut muffins are refined sugar and dairy free!

Instructions
  1. Lightly grease a 12 cup muffing pan (or use patty pan cases)
  2. Heat the oven to 180 degrees celsius
  3. Place all of the dry ingredients (including zest) in a bowl and mix through
  4. Add the zest and carrot and stir until fully coated with the dry ingredients
  5. Add the oil, maple syrup and lightly beaten eggs to the dry ingredients, stir until just combined
  6. Spoon into the muffin pan and bake for 25 minutes
  7. Remove from the oven and brush with the extra maple syrup and sprinkle over the extra chopped walnuts
  8. Remove from the pan and allow to cool
