Chicken Fajitas with Home Made Spelt Tortillas

A Mexican style feast for one. Tasty chicken with onions, peppers, salsa and home made spelt tortillas in no time!!

To be honest this could serve 2 people if they’re not big eaters. I easily finished the lot but admit I did train pretty hard today…the Melbourne Marathon is only 7 weeks away and today was a lazy 27km training run.

Although I was pretty tired when I got in the door this recipe was still easy enough to pull together quickly and certainly hit the spot.

Instructions
  1. Prepare your ingredients. Slice the chicken and capsicum. Peel and slice 3/4 of the shallot, finely dice the other 1/4. Dice the tomato and drain the tinned corn.
  2. Start the tortilla dough. Mix the flour, salt, oil and water in a bowl until well combined. Place the bowl in the fridge while you prepare the fajitas.
  3. Mix the spices and cornflour and stir through the sliced chicken, set aside to marinade while you make the salsa.
  4. Mix the tomato, diced shallot and corn in a small bowl. Add a teaspoon of oil and the juice of half of the lime. Season to taste
  5. Heat a frying pan and add the remaining oil.
  6. Add the sliced capsicum and shallot & stir-fry for a few minutes
  7. Add the chicken and continue to stir-fry for another minute
  8. Add the chopped garlic and chilli (if using)
  9. Stir fry until the chicken is just cooked. Season to taste. Transfer the mix onto a plate & cover with foil (you'll use the same pan for the tortillas)
  10. Dust your bench top with a little flour & knead the dough for 30 seconds (spelt doesn't need to be kneaded very long)
  11. Split the dough into two and roll out into 2-3mm thick rounds
  12. Heat a teaspoon of oil in your frying pan
  13. Add one of your tortillas & cook for about 30 second before turning over, cook for another 30 seconds
  14. Repeat the above step for the next tortilla, make sure you don't cook them too long at they'll go crunchy and you won't be able to roll them (I can feel a crunchy tortilla recipe coming on...)
  15. Make up your tortillas, add a few teaspoons of yogurt and a squeeze of lime to each

If you choose not to make the tortillas (BTW, you're missing out), supermarket tortillas are fine. This can also be served on a bed of mashed sweet potato.

I haven't included fresh coriander (cilantro) in this dish, I didn't have any and I didn't miss it. If you want to include it chop up the leaves & add to the salsa, or scatter overt the fajita before rolling.
