Easy Paella

Don’t let the long list of ingredients put you off trying this recipe, it is actually pretty easy to make and totally delicious. The best part is you can change it up depending on your personal taste or on what you have to hand.

What I mean is, if you don’t like seafood, use more chicken…or vice versa. I don’t put chorizo in, mainly because you would only use about 1/3 of the chorizo for one serve and I don’t want to waste the rest of it. If you want to add it for a more authentic paella go for it.

I use chopped asparagus instead of peas, it’s lovely and fresh and in my opinion peas and rice don’t belong together, ever.

Any medium or long grain rice will work in this. If you use brown rice you will need a bit more stock and a longer cooking time.

Best served with a glass of wine, my favourite, a chilled glass of Rose….enjoy!

Saffron gives great colour bur don’t use too too much, it can be overpowering

 

Fry the shallot and garlic then add the pepper

Add the spices, including the saffron. Brown the chicken then add diced tomato, rice and stock & allow to cook for about 8 minutes.

Add the asparagus & stir through

 

Lay the seafood over the top of the rice, cover & allow to cook for 2 mins

  1. Cover the saffron in about a tablespoon of hot water
  2. Finely dice the shallot and garlic clove
  3. De-seed and dice the tomato, dice the pepper
  4. Heat the oil in a shallow pan over medium heat
  5. Add the shallot & garlic, stir until the shallot starts to become transparent, add the pepper, paprika, cumin, saffron and stir
  6. Chop the chicken into 2cm pieces, add to the pan and stir through
  7. When the chicken is lightly browned add the tomato
  8. Add the rice and mix through then add the stock
  9. Cover & allow the rice to cook for about 8 minutes
  10. Chop the asparagus into 1cm pieces
  11. Add the asparagus to the pan and stir through
  12. Add the prawns and calamari to the pan, cover and allow to cook for a further 2 minutes
  13. Serve
