Freekeh, Lentil and Herb Salad
A delicious and healthy salad full of herbs, freekeh and lentils. This makes a tasty lunch or side dish.
mixed freekeh and lentils
any ratio of freekeh to lentils is fine
flat leaf parsley
Extra Virgin Olive Oil
salt & pepper
Rinse and drain the freekeh and lentils
Add the grains to a medium pan with the water, cook over a medium heat until the lentils and freekeh is cooked (about 15 mins)
While the grains are cooking, chop the herbs and set aside
Dice the shallot very finely
Mix the lemon juice, honey, cumin and diced shallot in a small bowl along with a pinch of salt & pepper
When the grains are cooked rinse and drain then place in a large bowl
Add the herbs and dressing and mix through
Serve with your favourite protein (it is delicious with lamb!)
A few teaspoons of toasted slivered almonds or pine nuts would also be delicious in this dish.
