Miso Chicken Breast

One for a lazy day….Juicy and beautifully flavoured, this chicken breast is simply slathered in a miso soup sachet and panfried, this would also be delicious on the BBQ.

The little soup sachets are in the asian section of the supermarket, they’re ideal to have on hand for an easy snack or for using as a simple marinade. You could of course use plain miso paste but I like that these mean you only need to open up what you need, they also contain other flavours such as bonito.

Pound the chicken to an even thickness

Coat the chicken breast in the soup mix, those little dark bits are pieces of seaweed

 

Pan fry until cooked through, the soup paste does go quite dark

 

Serve with steamed greens and rice or noodles

Instructions
  1. Place the chicken in between two sheets of baking paper and pound it slightly to an even thickness
  2. Rub the soup paste over the fillet
  3. Heat the oil in a pan
  4. Add the chicken breast and cook for about 4 minutes each side until cooked through
  5. Rest the chicken for about 2 mins then slice and serve

Serve with steamed greens and rice or soba noodles.
