Roasted Tomato Soup

On a chilly day there’s nothing better than a steaming bowl of soup with a slab of crusty bread.

Inspiration for this recipe struck me as I was shopping for fruit and veggies on a Sunday morning. The tomatoes looked so amazing and the weather was just cold enough to make me crave home made soup for lunch.

Roasting the ingredients first intensifies the flavours. Then simply add chicken stock, simmer, blitz and you’re done…delicious roasted tomato soup is served!

Instructions
  1. Heat your oven to 200 degrees celsius
  2. Add all ingredients except the chicken stock to a small roasting pan. Roast for 20 minutes or until the garlic clove is soft
  3. Transfer the ingredients to a saucepan and add the stock. Remove the thyme sprig, strip the leaves and add them back into the saucepan.
  4. Simmer for 10 minutes then blitz with a stick blender
  5. Pass the soup through a sieve to remove the skins and seeds
  6. Add additional salt and pepper to taste
  7. Serve with crusty bread
