Steak with Veggie Hash

True comfort food and an easy weeknight dinner. This juicy steak and vegetable hash is ready in less than 20 minutes.

Steak and veggies can get a little repetitive, by making a few tweaks you have a deliciously different dinner. Adding thyme, garlic and a little butter make this taste amazing.

Instructions
  1. Peel the potato and carrot. Chop into 0.5 - 1cm dice
  2. Dice the zucchini the same size as your carrot & potato
  3. Heat a pan on a medium heat
  4. Oil and season your steak
  5. Add the steak to the hot pan & cook on one side for 3-4 minutes (or to your liking)
  6. Flip the steak and add the butter to the pan
  7. Add the carrot, potato & herbs and stir through
  8. Cook for a few minutes then remove the steak from the pan & leave it to rest
  9. Add the zucchini and crushed garlic to the pan & stir through
  10. Cook for 3-4 minutes stirring regularly
  11. Season with salt & pepper and serve with your steak. Drizzle any resting juices from the steak over your veggie hash.
Recipe Notes

I used fillet steak but any good cut will work.
