Steamed Mussels with tomato, chilli and garlic

This is one of the easiest yet most impressive dishes you can make. It takes less than 20 minutes in total and makes an ideal starter for any summer dinner party.

This will serve 1 person for dinner if served with crusty bread or 2 people as a starter. Use the calculator in the recipe table if you want to increase the number of serves.

After removing the beards, steam the mussels in a large pot with the other ingredients.

 

Garnish with parsley or sliced spring onions if you have them. Serve with crusty bread to mop up the juices and a large glass of wine…

  1. Rinse the mussels under cold water & de-beard (this means rip out the grassy bit attached to the side of the mussel, it isn't edible but won't harm you if you can't get it out. Just avoid eating it in the cooked mussel)
  2. Heat the oil in a large pan
  3. Place the diced shallot, garlic and chilli (if using) in the hot oil
  4. Turn the heat down to medium cook for about 2 minutes then add the wine, halved cherry tomatoes and lemon zest
  5. Allow the alcohol to burn off (about 1 minute) then add the passata
  6. When the pasta is hot add the mussels place the lid on the pan to steam for 2-3 minutes
  7. Take the lid off & stir through
  8. Throw away any mussels that haven't opened (just in case they're bad)
  9. Serve with wedges of lemon and crusty bread to soak up the yummy juices
