Veggie Stir-fry with Soba Noodles

So after several posts featuring meat I thought it was time for a veggie only dish, prompted while out at a work dinner this week. One of my colleagues was asking about my blog said he would check it out but also mentioned he & his family are looking for more vegetarian dishes. So here we are…

I love this dish because as well as being easy to make, I don’t miss the meat.┬áHaving said that you could add some thinly sliced chicken, beef or pork if you wish.

Thinly sliced mushrooms, carrot & zucchini cook nice & quickly.

 

The spinach is done in a flash, add the noodles at this point & heat through…

 

Done! Sprinkle with some sesame seeds if you have them…

Tasty veggies with soba noodles, this dish is vegan and delicious!

Instructions
  1. Cook the noodles as per packet directions, when cooked add to a bowl of cold water to stop the cooking process
  2. In a small bowl mix the sesame oil, maple, soy, chilli sauce, water and cornflour
  3. Slice the mushrooms thinly
  4. Use a vegetable peeler to slice the carrot & zucchini into ribbons. Slice the garlic
  5. Heat the oil in a wok or frying pan
  6. Add the mushrooms and stir-fry for 3 minutes
  7. Add the carrot and garlic, stir through for 1 minute
  8. Add the zucchini, stir-fry for 1 minute
  9. Add the sauce mixture, then the spinach.
  10. Stir through the sauce and spinach then add the drained noodles
  11. Mix everything through (sprinkle with sesame seeds if you have them) then serve.
